It’s such a good thing! Not only is it delicious, but if you use raw cream and real salt, it’s so healthy for you. Here’s a quick, easy way to make homemade butter (taken from Homesteading for Beginners Vol. 1, available at www.NoGreaterJoy.org): Pour cream into blender. Start on slowest speed. When the cream is frothy, you can change to high speed. Keeping an eye on it, let cream mix for 3-5 minutes, or until you can see yellow clumps of butter separated from the milk. Scoop out butter, reserving buttermilk for wheat biscuits. Rinse in very cold water while you knead the butter. Rinse until the water runs clear. Press all excess liquid out, and salt to taste.
