Kathy made this for Mike and Debi for their 40th anniversary.
1 Pie Crust—baked (Hint: Brush the crust with beaten egg white before baking. This makes it golden brown and keeps it from getting soggy.)
2 cups Sweet Potatoes
½ cup Sugar
½ tsp. Cinnamon
¼ tsp. Allspice
¼ tsp. Nutmeg
3 Eggs, slightly beaten
1 cup Buttermilk or Sour Cream
Make pie crust and bake about 10 minutes at 375°. Keep oven hot.
Filling: Stir together sweet potatoes, sugar, spices and 1/8 tsp. salt. Add
eggs and beat lightly. Gradually add buttermilk or sour cream. Mix well.
Pour into crust and bake 40 minutes or until inserted knife comes out clean.
Cool on wire rack for no more than 2 hours. Cover and chill.
May serve with whipped cream.
