Pizza Day

Pizza

• 2 ½ cups of whole wheat flour, or
• 1 cup of whole wheat and 1 ½ cup of white flour
(for fluffier, lighter crust use half and half flour)
• 1 Tbsp. of sugar
• 1 Tbsp. of dry yeast instant yeast
• 3/4 tsp. of salt
• 1 cup of water (120-130º)
• 2 Tbsp. of oil

Mix water, salt, oil, sugar, some flour, yeast, then let it bubble/rise for about 10 min. Mix rest of flour and then go ahead and shape it out. Add toppings, let it rise 15-20 min., bake at 450º (10-12 min. for large; 5-7 min. for medium).

Mel, the General Manager here at NGJ, came out one day while we were making pizza to show us his expertise on throwing pizza—which he learned in his younger days while working at his grandfather’s pizza restaurant.
