Weekly Recipe: Soooo Good Fish Soup

Recipe from Shoshanna's Making Babies DVD series, coming soon (www.bulkherbstore.com).

This recipe calls for 2 cups of brown rice, to be cooked ahead of time.

Herban Rice
2 cups Brown Rice, cooked
1 T. Butter
1/2 tsp. Peppercorns, freshly ground
1 Lime, juiced
1/4 cup Chives
1/4 cup Cilantro
1/2 cup Tomatoes, chopped
Salt, to taste

1. Mix all ingredients together

Soooo Good Fish Soup

Prep: 5 min.  Cook: 28 min.  Serves: 4-6

1/2 cup Onions, chopped small
1/2 cup Carrots, chopped small
1 T. Olive Oil
1/2 cup Asparagus, chopped
1/2 cup Red Peppers, chopped
4 fillets of Tilapia
4 cups Chicken Broth or Vegetable Broth
1/2 cup Herban Rice
1/2 tsp. Pepper
2 tsp. Onion powder
1/4 cup Cilantro
1 Lime, juiced
1 T. Butter

1. Wash and chop veggies.
2. In a large sauce pan, sauté first five ingredients on medium-high for 3 minutes. Add tilapia. Cook 5 minutes.
3. Chop fish into large bite-sized pieces while it is cooking. Add the rest of ingredients and cook for 20 more minutes. Garnish with cilantro.
4. Serve hot. This soup is sooo good!!
