Rub butter in 2 cups leaving 1 tsp. of butter in the bottom of each cup. Add 1 tsp. brown sugar to butter in each cup.
Mash 2 Tbsp. of canned or fresh pineapple into small pieces, then add 1 Tbsp. to each butter and sugar mixture.
In third cup mix 1 tsp. each of butter and brown sugar, 1 Tbsp. self-rising flour, egg, 1 Tbsp. pineapple juice and a dash of salt and vanilla; stir well.
Pour half of the mixed batter into each cup over the sugar/pineapple mixture. Do not stir together.
Put both cups in microwave; cook for 3 minutes. It’s very hot—be careful taking it out! Turn upside down and enjoy. Share!
