Healthy Caramel Corn

  1. Have already popped: 20 cups plain popped corn
  2. Melt in a pan & simmer for 5 minutes:
    • 1 cup succanat or rapadura (or brown sugar)
    • 1/4 cup honey (or corn syrup)
    • 6 oz. pastured butter (or any butter)
  3. Remove pan from heat and add:
    • 1/2 tsp. vanilla extract
    • 1/4 tsp. baking soda
  4. Pour warm liquid over popcorn. Mix to coat evenly.
  5. Bake uncovered for 15 minutes in a large pan like a turkey roaster at 300°.

For a sweeter treat, use less popcorn. For a less sweet corn, add more popped corn. Use sea salt to taste.

  1. We have tried this recipe 3 times and it is delicous. Thank you for sharing. I used Maple Syrup too instead of sugar in a smaller quantity and still yummy!
